Vegan Cupcakes

DSC_0023 copyAnother one vegan recipe! This time it’s all about vegan cupcakes with berries. Recipe with no eggs or dairy, but these cupcakes are so delicious. I bake them with blueberries and chia seeds, but you can use any other berries and sunflower seeds.

To bake vegan cupcakes you’ll need:

  • 2 cups wheat flour

  • 1 cup blueberries

  • 1 cup water

  • 1/2 cup brown sugar

  • 2 tbsp chia seeds or sunflower seeds

  • 5 tbsp vegetable oil

  • 1 tsp baking soda

  • 1/3 tsp lemon juice

  • Ground nutmeg and cloves

Preheat oven to 390 F (200 C).

Mix blueberries, water, oil and brown sugar. Add chia seeds, mix wellDSC_0001

Mix the flour with the baking soda, nutmeg and cloves in another bowlDSC_0003

Gradually add to the mix. Also add lemon juiceDSC_0006

Spread the dough into the baking cups and bake for 20 minutesDSC_0007DSC_0013
