Another one vegan recipe! This time it’s all about vegan cupcakes with berries. Recipe with no eggs or dairy, but these cupcakes are so delicious. I bake them with blueberries and chia seeds, but you can use any other berries and sunflower seeds.
To bake vegan cupcakes you’ll need:
2 cups wheat flour
1 cup blueberries
1 cup water
1/2 cup brown sugar
2 tbsp chia seeds or sunflower seeds
5 tbsp vegetable oil
1 tsp baking soda
1/3 tsp lemon juice
Ground nutmeg and cloves
You need to do:
Preheat oven to 390 F (200 C).
Mix blueberries, water, oil and brown sugar. Add chia seeds, mix well
Mix the flour with the baking soda, nutmeg and cloves in another bowl
Gradually add to the mix. Also add lemon juice
Spread the dough into the baking cups and bake for 20 minutes
Let cupcakes cool and enjoy!
