Pumpkin Juice

Halloween, and all this magical Fall! This time is perfect for the HP books, movies, knitted striped scarves and pumpkin juice.

I really like the concept of this Bottle Pumpkin Juice, but I’m not sure that it is healthy as the original wizarding beverage. You know, the students at Hogwarts drink it all the time: on breakfast, lunch, at feasts or on other occasions.

Well, in our world there is still no ‘London Pumpkins & Sons’, but instead we have Dinah Bucholz’s The Unofficial Harry Potter Cookbook. So, let’s make our own HP pumpkin juice!

You need:

  • 1 small pie pumpkin (or 1 cup canned pumpkin)

  • 2 cups apple juice

  • 1 cup white grape juice

  • 1 cup pineapple juice

You need to do:

For fresh pumpkin, preheat the oven to 400 F (200 C). Split pumpkin in half, remove the seeds and place pumpkin on a baking sheet. Bake for 1 hour or until soft.

When pumpkin is cool, scoop out the flesh. Discard the skin. Using a spatula, press flesh through a fine mesh sieve into a bowl. Scrape and mash as you push until you have 1 cup of pumpkin. Discard the pulpy mass in the sieve.

Pour apple juice, grape juice, pineapple juice and pumpkin into a pitcher; stir well until combined completely. Chill your juice until it’s very cold. Enjoy!

Cucumber and Strawberry. Your best friends in summer!

I think summer is the best time for new experiments in the kitchen. Today I’ll show you three fresh recipes with cucumber and strawberries and you’ll be delighted with them.

So get ready to try a light summer cocktail, tender salad and tea sandwiches but don’t forget that you need a lot of cucumbers and strawberries. How fortunate that now they’re everywhere! 🙂

Cucumber Mint Water with Lime and Strawberry

You need to have:

  • 10 strawberries

  • 2-3 cucumbers

  • 2 limes

  • 1/4 cup fresh mint leaves

  • Ice cubes

  • Water

You need to do:

Sliced cucumbers, strawberries and limes. Cover with water. Add mint and ice. Drink immediately!

Strawberry Cucumber Tea Sandwiches (16 pieces)

You need to have:

  • 16 round crispbreads

  • 4 oz cream cheese, softened

  • 1 English cucumber (or 2-3 pickling)

  • 8 strawberries

  • Salt

  • Dill

You need to do:

Mix together the cream cheese, dill and salt. Spread an equal amount of the cream cheese mixture on each bread round, about 1 to 1 1/2 teaspoons each. Slice 16 thin pieces of cucumber. Place the cucumber on top of the cream cheese. Cut the green tops from the strawberry. Slice the strawberry in half. Make thin slices in each strawberry half and place on top of the cucumber. Enjoy!

Cucumber Strawberry Salad

You need to have:

  • 5 fresh cucumbers

  • 10-12 strawberries

  • 1/2 pound fresh spinach

  • 1/4 pound spring mix salad (lettuce, arugula, baby kale etc.)

  • 1/2 cup greek yogurt or sour cream

  • 2 tsp olive oil and 1/2 tsp balsamic vinegar (optional)

  • 10 sprigs fresh mint

  • Salt and freshly ground black pepper

You need to do:

Sliced cucumbers and strawberries. Cut the greens into large chunks or tear them by hand. Mix olive oil and balsamic vinegar and set aside. Finely chop the mint, then mix with yogurt (sour cream) and spices, whisk all. Mix cucumbers, strawberries and greens. Sprinkle with olive oil and vinegar. Serve portions on a plate with yogurt sauce on top. Yummy!

Easter wreath

Easter is coming soon and I’ll tell you how to make a wonderful fabric Easter wreath. You can leave it on your door till the Earth Day because it’s also a very cute spring wreath.
You need to have:

  • Fabric for wreath and birds

  • Batting

  • Threads

  • Scissors

  • Needle

  • Lace

  • Ribbon

You need to do:

Cut the two parts of this form out

Sew parts together. Leave a hole to fill batting

Your Easter wreath is ready and all your guests and neighbors are fascinated! Happy Easter!

Homemade “Mors”

I have a great idea for you to prepare delicious drink based of water and any sweet jam, honey or even maple syrup.
So, select jam, syrup or honey to taste and add one or two tablespoons of what you’ve selected to the glass of water.

It may be cold water with ice cubes or sparkling water. Or it can be hot water in a beautiful teacup and then you’ll get a wonderful warming drink.

All you need to do is mix the added ingredient with water and enjoy.

In my homeland Ukraine this drink is called “Mors” but you can come up with a name for it yourself!

Mood for tea

Making these drinks you can take any simple tea that you like. I suggest you use one of three herbs for different parts of the day. I like to store these herbs in cute jars so they become a kind of kitchen decoration.

Cardamom is very invigorating and spicy. It will approach for morning tea (or coffee). Brew your tea as usual and throw two or three grains of cardamom in a cup. Leave for two minutes. And then enjoy your tonic drink.

Siberian rose is very flavorful and tender. Its taste brings you sweet romantic mood. Put two or three buds in a cup with dry tea. Pour hot water. Wait 3-4 minutes and than enjoy.

Lavender is the best choice for bedtime tea. It relaxes your body and your mind. Brew a half teaspoon of dry lavender flowers with tea (best to choose green or chamomile tea) and drink just in bed. Sleep well!

Favorite winter tea

This tea is called “The Lover”, because it warm, sweet and even piquant (Do not laugh – it’s true)!

You need to have:

  • Water – 1 cup
  • Ginger – piece of root
  • Lemon – 1-2 slices
  • Honey – 1 tbs.

You need to do:

  1. Boil water in a kettle.
  2. Grate ginger and put it in a cup.
  3. Pour ginger with hot water.
  4. Leave for 10-15 minutes.
  5. Add a slice of lemon and honey to taste.
  6. You can also add lemon balm, mint or cinnamon.
