Almond Orange Muffins

Try these wonderful muffins when you want light and delicious baking without eggs. These muffins have a very delicate orange flavor. They are perfect for tea parties and stay fresh for a long time, but will probably be eaten instantly.

You will need:

  • 1 cup of flour

  • 1/2 cup sugar

  • 1 stick of butter

  • 1/2 cup of almond flour

  • 1 orange

  • raisins

  • a pinch of salt

  • 1/3 tsp cinnamon

  • 1/2 tsp soda


Preheat the oven to 340 F (170 C). Leave the butter to soften.

Squeeze the juice from the orange, add cinnamon

Mix butter with sugar, add almond flour and orange juice with cinnamon, pinch of salt and soda

Pour in the flour, mix well

Add some raisins. Put the dough into forms and bake for 30-40 minutes

Cool the muffins and decorate them as you like. Enjoy your tea!


Chocolate Crinkles

dsc_0009Let’s bake some chocolate crinkle cookies! They are so delicious, soft, moist, chewy and fudge-like on the inside, and slightly crisp on the outside. Well, they are just incredibly good! And there’s some kind of magic in these delightful cracks.

To make chocolate crinkles you need:

  • 1/2 cup unsweetened cocoa powder

  • 1 cup sugar

  • 3-4 tbsp vegetable oil

  • 2 eggs

  • 1 tsp pure vanilla extract

  • 1 cup flour

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 3-4 tbsp powdered sugar

You need to do:

downloadsMix the cocoa powder, sugar, and vegetable oil in a bowl. Add eggs, then stir in the vanilla. In another bowl combine the flour, baking powder and salt.

Stir flour mixture into the cocoa mixture. Cover dough bowl with plastic wrap, put in refrigerator, and chill for 4 hours.

Preheat oven to 350 degrees F (175 C).

Roll the dough into one inch balls. Coat each ball in powdered sugar before placing onto parchment-lined cookie sheets.

Bake for 10 to 12 minutes. Let the cookies cool and then enjoy!dsc_0009dsc_0003

Vegan Blueberry Apple Oat Crisp

DSC_0010This vegan lazy girl’s crisp is perfect for breakfast. It’s rustic and fuss-free and utilizes fresh or frozen fruit, whatever you happen to have on hand. I like it with some blueberries and apple but it’s also tasty with rhubarb and raspberry.

For Vegan Blueberry Apple Oat Crisp you’ll need:

  • 1/3 cup blueberries

  • 1 apple peeled, cored, and cut

  • 1/4 tsp cinnamon

  • 1/3 cup old-fashioned rolled oats

  • some nuts (on your choice)

  • 2 tbsp maple syrup

  • 1 tbsp vegetable oil or vegan butter

How to make:

Preheat oven to 375 F (180 C).

Mix berries, apple slices and cinnamon togetherDSC_0002

Grind the nuts. Combine oats, nuts, maple syrup and oil (or vegan butter)DSC_0003

Vegan Oatmeal Cookies

DSC_0010 copyI have a new fantastic baking recipe for you. Hard to believe but these delicious cookies are vegan, gluten-free, dairy-free, egg-free, grain-free, flourless and contain no refined sugar.

To make these cookies you need:

  • 1/2 cup peanut butter

  • 1/3 cup maple syrup

  • 1/2 cup quick rolled oats

  • 1/2 cup raisins

  • some mini-chocolate chips

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1/2 tsp cinnamon

You need to do:

Preheat oven to 350 F (180 C).

Add peanut butter, maple syrup, oats, salt, baking powder and cinnamon to a bowl and stir until well combinedDSC_0001

Line a baking pan with parchment paper and scoop out about a tablespoon at a time and drop in onto the parchment paper. Add some chocolate chipsDSC_0003

Bake your cookies about 12 – 15 minutes, or until they become golden on top.

Roasted Asparagus Wrapped in Turkey

DSC_0093 copyTry my new recipe of roasted asparagus. If you’ve tried the cheese or prosciutto , it’s time to wrap asparagus in turkey meat. You only need a few slices. It turns an elegant, delicious and easy side dish.

You need to have:

  • Raw asparagus spears

  • 1 tbsp vegetable oil

  • Low sodium turkey lunch meat

  • Mozzarella cheese

  • Seasonings

Preheat the oven to 400 degrees F.

Wash asparagus and cut off bottom stemsDSC_0076

Take 1/4 slice of turkey meat and wrap around the 2-3 asparagus spears. Spray a baking sheet with vegetable oil and put the asparagus on itDSC_0079

Sprinkle with grated mozzarella cheese and seasoningsDSC_0083

Vegan Banana Bread

DSC_0013 copyThis banana bread is eggless and dairy-free, but it’s so good you’ll hardly notice the difference. And it is definitely one of my favorite recipes. You should try!

For a medium-sized banana bread you’ll need:

  • 2 cups wheat flour

  • 1 cup orange juice (or water)

  • 2 ripe bananas

  • 3-4 tbsp of vegetable oil

  • 1/2 cup brown sugar

  • Raisins, nuts, cranberries, chocolate chips — whatever you like

  • 1 tsp baking soda (+ 1/2 of lemon juice, if you use water instead of orange juice)

You need to do:

Preheat oven to 370 F (190 C).

Mash the bananasDSC_0001

Then add the orange juice, vegetable oil and raisins (nuts, whatever). Mix wellDSC_0003

Mix the flour with soda and gradually pour in the mixture. Put the dough into the baking form and bake for about an hourDSC_0008-001

Vegan Cupcakes

DSC_0023 copyAnother one vegan recipe! This time it’s all about vegan cupcakes with berries. Recipe with no eggs or dairy, but these cupcakes are so delicious. I bake them with blueberries and chia seeds, but you can use any other berries and sunflower seeds.

To bake vegan cupcakes you’ll need:

  • 2 cups wheat flour

  • 1 cup blueberries

  • 1 cup water

  • 1/2 cup brown sugar

  • 2 tbsp chia seeds or sunflower seeds

  • 5 tbsp vegetable oil

  • 1 tsp baking soda

  • 1/3 tsp lemon juice

  • Ground nutmeg and cloves

Preheat oven to 390 F (200 C).

Mix blueberries, water, oil and brown sugar. Add chia seeds, mix wellDSC_0001
