Banana Mousse

DSC_0006Recently, the circumstances were such that I could only eat purees and liquids. But I desperately wanted a dessert so I decided to make a mousse – banana mousse with a whipped cream. And you know what? It is so good!

For this mousse you need a very few ingredients and really little time.

You need to have:

  • 2 bananas

  • 1 cup heavy cream

  • 1 tbsp powdered sugar

  • 1/2 tsp vanilla extract

You can also add some lemon juice inside and some chocolate curls on top if you likeDSC_0004

You need to do:

Slice the bananas. Make a puree, add powdered sugar and vanilla extract (lemon juice is optional). Mix well.

Whip the cream in the another bowl until stiff peaks formDSC_0008

Combine banana puree and whipped cream. Stir and serve the mousse in cups. You can also cool the mousse in the fridge and serve it with chocolate curls.

Vegan Banana Bread

DSC_0013 copyThis banana bread is eggless and dairy-free, but it’s so good you’ll hardly notice the difference. And it is definitely one of my favorite recipes. You should try!

For a medium-sized banana bread you’ll need:

  • 2 cups wheat flour

  • 1 cup orange juice (or water)

  • 2 ripe bananas

  • 3-4 tbsp of vegetable oil

  • 1/2 cup brown sugar

  • Raisins, nuts, cranberries, chocolate chips — whatever you like

  • 1 tsp baking soda (+ 1/2 of lemon juice, if you use water instead of orange juice)

You need to do:

Preheat oven to 370 F (190 C).

Then add the orange juice, vegetable oil and raisins (nuts, whatever). Mix wellDSC_0003

Mix the flour with soda and gradually pour in the mixture. Put the dough into the baking form and bake for about an hourDSC_0008-001

Banana Coconut Cookies

You need to have:

  • 2 bananas

  • 5 tbsp coconut flour or shredded coconut

  • 1 tbsp sugar (optional)

  • 2 tbsp vegetable oil

  • 2 tbsp wheat flour

  • 2 tsp sesame seeds

Mash the bananas with a fork or blender. Add the sugar and oil. Mix wellDSC_0002

Gradually pour coconut flour (or shredded coconut) and mixDSC_0004

Add some sesame seedsDSC_0005

Then add about 2 tbsp of wheat flour. The texture should be alike a wet cookie doughDSC_0009

Scoop dough onto the cookie sheet.You’ll get 10-12 cookies from this recipe. Sprinkle some sesame seeds on each cookieDSC_0012
