It’s time to cook creamy, velvety smooth and delicious pumpkin soup!
This is very easy pumpkin soup and it’s also without any chicken or vegetable broth.
So, you need to have:
1 lb pumpkin chopped into large chunks (remove skin and seeds)
1 large leek
1-2 potatoes, 1-2 carrots (optional)
8-10 cloves of garlic
0.5 pint heavy cream –
Salt, pepper, your favorite seasonings
Vegetable oil – 4-5 tbsp
You need to do:
Cut leek into slices.
In a large pot over medium heat add vegetable oil, sauté leeks and for about 5 minutes.
Add chopped potatoes and carrots. Simmer for 3-4 minutes (optional).
Add pumpkin and garlic. Simmer for another 5-7 minutes.Pour water, bring to a boil. Water should cover the vegetables. Add salt, pepper and seasonings, cover the lid. Cook over medium heat for 20-25 minutes.
Blend your soup with a stick blender. Reduce heat to low and simmer for more 20 minutes, uncovered.
Turn off the heat, add heavy cream and mix everything well. Cover the lid and leave pumpkin soup for more 10 minutes.
Season to taste with salt and pepper. Add some yoghurt or sour cream and serve with bread or croutons.
