Potato pancakes

Do not know what to do with two potatoes, one egg and a couple tablespoons of flour? I’ll tell you, and maybe this will be your favorite recipe! Potato pancakes are perfect meal for any time of the day but I prefer to eat them for breakfast.

So, for two servings you need to have:

  • 2 large potatoes

  • 1 egg

  • 2 tbsp flour

  • Salt, pepper

  • Vegetable oil (for frying)

You need to do:

Wash, peel and rinse potatoes with water. Grate the potatoes on a fine grater. If you want to your potato pancakes be juicy and more spicy also grate there a small onion

Add egg, flour, salt and pepper to potato mixture. Mix well

In a frying pan heat up some vegetable oil and place potato mixture in the form of small pancakes

Fry the potato pancakes on a medium heat until golden. Wrap and fry on the other side until cooked

Hot potato pancakes serve to the table with a sour cream. Bon Apetit!


Almost pancakes

Recently I tried a new recipe with yogurt. Actually, if the yogurt is not very thick and sour, then you can get very cute cupcakes, but in my case they became something like small flat cakes that taste like cottage cheese pancakes, but therefore they are perfect for breakfast!So if you’re curious to try something new, then let’s start!

You need to have:

  • 1 cup yogurt

  • 1 stick butter

  • 1 egg

  • 1.5-2 cups flour

  • 0.5 cups of sugar

  • 1 tsp baking powder

  • 0.5 tsp vanilla essence

  • 1 tsp rum (optional)

You need to do:

Preheat oven to 400 degrees. Softened butter mixed with sugarAdd egg, vanilla essence (1 tsp rum) and mix again. Then add baking powderPour the yogurt and mix wellGradually add the flour and knead the dough. It should not be very thickFill forms for cakes with dough and baked in the oven for 15-20 minutes

Get the cakes from the oven and let them cool.

My “almost pancakes” I served for breakfast with maple syrup, but they are nice with honey, jam or condensed milk. Let it be as you like!

Let’s start with pancakes!

If you will buy a liquid yogurt or kefir and try to cook with it pancakes, you’ll see that they will be delicious and fluffy!

You need to have:

  • Kefir – 2 cups
  • Eggs – 2
  • Sugar – 2 tbsp.
  • Salt – 0.5 tsp.
  • Baking soda – 0.5 tsp.
  • Vegetable oil – 2 tbsp.
  • Flour – 12 tbsp.

You need to do:

  1. Beat eggs with sugar and salt.
  2. Pour the kefir, add baking soda, stir.
  3. Add flour and mix well. Add vegetable oil, stir again and let stand for 15-20 minutes (to become pancakes more delicate).
  4. Cook in a frying pan greased with oil.

Finished pancakes you should beautifully expanded in plates and add maple syrup or jam! Yum-yum!
