Vegan Mushroom Soup

This is probably the most simple soup recipe that can be. At the same time, this soup is very tasty.¬†It is also light, gluten-free and vegan. ūüôā

You will need quite a bit of ingredients:

  • 3-4 potatoes

  • 1-2 carrots

  • 1-2 onions

  • 1/2 lb mushrooms (I made it with shiitake, but portobello or button mushrooms are also good)

  • Salt, pepper, seasonings

  • Vegetable oil 3-4 tbsp

You have to do:

Bring water to a boil in a large saucepan. Salt the water and add the chopped potatoes and carrots. Leave to cook for 20 minutes.

Meanwhile stir the diced onions with the vegetable oil in a frying pan.

Add slicing mushrooms and stir them with onions together. Add some salt, pepper and seasonings and continue to cook about 10 minutes.

Reduce the heat under the saucepan and add mushrooms and onions to it.

Allow to cook for at least 15 minutes.

When the soup is ready, you can use a blender to make it creamy. Or just eat it with some bread or croutons.

Chocolate Crinkles

dsc_0009Let‚Äôs bake some chocolate crinkle cookies! They are so delicious, soft, moist, chewy and fudge-like on the inside, and slightly crisp on the outside. Well, they are just incredibly good! And there’s some kind of magic in these delightful cracks.

To make chocolate crinkles you need:

  • 1/2 cup unsweetened cocoa powder

  • 1 cup sugar

  • 3-4 tbsp vegetable oil

  • 2 eggs

  • 1 tsp pure vanilla extract

  • 1 cup flour

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 3-4 tbsp powdered sugar

You need to do:

downloadsMix the cocoa powder, sugar, and vegetable oil in a bowl. Add eggs, then stir in the vanilla. In another bowl combine the flour, baking powder and salt.

Stir flour mixture into the cocoa mixture. Cover dough bowl with plastic wrap, put in refrigerator, and chill for 4 hours.

Preheat oven to 350 degrees F (175 C).

Roll the dough into one inch balls. Coat each ball in powdered sugar before placing onto parchment-lined cookie sheets.

Bake for 10 to 12 minutes. Let the cookies cool and then enjoy!dsc_0009dsc_0003

Vegan Blueberry Apple Oat Crisp

DSC_0010This vegan¬†lazy girl‚Äôs crisp is perfect for breakfast. It‚Äôs rustic and fuss-free and utilizes fresh or frozen fruit, whatever you happen to have on hand. I like it with some blueberries and apple but it’s also tasty with¬†rhubarb and raspberry.

For Vegan Blueberry Apple Oat Crisp you’ll need:

  • 1/3 cup blueberries

  • 1 apple¬†peeled, cored, and cut

  • 1/4 tsp cinnamon

  • 1/3 cup¬†old-fashioned rolled oats

  • some nuts (on your choice)

  • 2 tbsp maple syrup

  • 1 tbsp vegetable oil or vegan butter

How to make:

Preheat oven to 375 F (180 C).

Mix berries, apple slices and cinnamon togetherDSC_0002

Grind the nuts. Combine oats, nuts, maple syrup and oil (or vegan butter)DSC_0003

Vegan Oatmeal Cookies

DSC_0010 copyI have a new fantastic baking recipe for you. Hard to believe but these delicious cookies are vegan, gluten-free, dairy-free, egg-free, grain-free, flourless and contain no refined sugar.

To make these cookies you need:

  • 1/2 cup peanut butter

  • 1/3 cup maple syrup

  • 1/2 cup quick rolled oats

  • 1/2 cup raisins

  • some mini-chocolate chips

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1/2 tsp cinnamon

You need to do:

Preheat oven to 350 F (180 C).

Add peanut butter, maple syrup, oats, salt, baking powder and cinnamon to a bowl and stir until well combinedDSC_0001

Line a baking pan with parchment paper and scoop out about a tablespoon at a time and drop in onto the parchment paper. Add some chocolate chipsDSC_0003

Bake your cookies about 12 – 15 minutes, or until they become golden on top.

Banana Mousse

DSC_0006Recently, the circumstances were such that I could only eat purees and liquids. But I desperately wanted a dessert so I decided to make a mousse – banana mousse with a whipped cream. And you know what? It is so good!

For this mousse you need a very few ingredients and really little time.

You need to have:

  • 2 bananas

  • 1 cup heavy cream

  • 1 tbsp¬†powdered sugar

  • 1/2 tsp vanilla extract

You can also add some lemon juice inside and some chocolate curls on top if you likeDSC_0004

You need to do:

Slice the bananas. Make a puree, add powdered sugar and vanilla extract (lemon juice is optional). Mix well.

Whip the cream in the another bowl until stiff peaks formDSC_0008

Combine banana puree and whipped cream. Stir and serve the mousse in cups. You can also cool the mousse in the fridge and serve it with chocolate curls.

Vegan Gluten Free Brownies

DSC_0016 copyEveryone loves brownies. Well, almost everyone. There are many recipes for brownies, and today I’ll show you another one.¬†Vegan? Yes. Gluten Free? Yes. Sweet chocolate yummy¬†brownies?¬†Oh yeah!

You need to have:

  • 3 tbsp coconut flour

  • 6 tbsp sugar

  • 1/4 cup cocoa powder

  • 1/2 tsp baking powder or baking soda

  • 1/4 tsp salt

  • 10 tbsp coffee (or water)

  • 1 tsp vegan gelatin

  • 1 cup peanut butter

  • 1 tsp stevia¬†extract

  • 1 tsp vanilla extract

  • 2¬†tbsp¬†chopped chocolate (melted)

You need to do:

Preheat oven to 170 degrees (325 F).

Mix coconut flour and sugarDSC_0001

Pour the coffee (or water) into another bowl, add vegan gelatin. Leave for 5 minutesDSC_0003

Roasted Asparagus Wrapped in Turkey

DSC_0093 copyTry my new recipe of roasted asparagus.¬†If you’ve tried the cheese or prosciutto , it’s time to wrap asparagus in turkey meat. You only need a few slices.¬†It turns an elegant, delicious and easy side dish.

You need to have:

  • Raw asparagus spears

  • 1 tbsp vegetable oil

  • Low sodium turkey lunch meat

  • Mozzarella cheese

  • Seasonings

Preheat the oven to 400 degrees F.

Wash asparagus and cut off bottom stemsDSC_0076

Take 1/4 slice of turkey meat and wrap around the 2-3 asparagus spears. Spray a baking sheet with vegetable oil and put the asparagus on itDSC_0079
